Charley G's: Chef Holly Goetting
"Since 2001, Holly Goetting has worked at Charley G's starting as a cook in the kitchen, she worked her way up to the position of sous chef in 2002 and to executive chef in 2003. In 2005 Holly received the “Chefs to Watch” award from Louisiana Cookin Magazine, and that gave her the opportunity to cook at the James Beard House in New York City. In 2007 Holly won best of show at Palates & Pate, and in 2008 Holly was named Best Chef by the Times of Acadiana. In her position as chef at Charley G's, Holly enjoys most the freedom of creativity and self-expression of working with fresh ingredients. The monthly wine dinner is high on her list of favorite activities at the restaurant. When she is away from the kitchen she generously gives her time to various charity organizations in and around Lafayette.
Although her travels have taught her different culinary customs, she appreciates the special flavors and tastes of Louisiana—especially Lafayette and Acadiana."

The restaurant was named Clementine Dining & Spirits to pay tribute to owner Wayne Peltier's favorite artist, Clementine Hunter. Clementine, who is known as a folk artist, was born in 1887 in the Cane River country of Louisiana. While in her fifties and working at Melrose Plantation, Clementine found tubes of paint lying around, beginning her life as an artist. Clementine would paint on whatever she could find. Her first painting was rendered on a window shade. Her paintings came from daily life on Melrose Plantation – baptisms, funerals, wash-days, and the harvesting of sugar cane are a few events that she documented. Clementine Hunter died in 1988 at the age of 101. We have incorporated Clementine’s famous backwards-C & H insignia into our logo and the placement of our silverware. As the story goes, Clementine thought the normal C was rude, with its back to you, so she signed her C backwards with its arms reaching out to hug you. A Clementine Hunter is prominently displayed near the turn of the century mahogany bar and local artists are displayed throughout the restaurant.

Guamas Restaurant: Chef Reubens Mesa "Guamas originally opened in a small space on Johnston Street in 1997 but today Guamas has grown into a large space in downtown Lafayette. Guamas is owned by Chef Rubens (a native of Cuba) and Julieta (a native of Colombia, raised in Venezuela) Mesa and together the couple has made Guamas a local hot spot that provides an upbeat Caribbean atmosphere, service traditional homemade food that is both healthy and delicious!"

Chef Paul's culinary career began on his ninth Christmas when his Grandmother gave him a cookbook. Having served under some of the area's most prominent chefs, Pauls worked his way up and back down the east coast from Floriday to New York before finally coming back to Lafayette. His culinary background is principally French cuisine with Central American, Italian, and Asian influences. Paul is rooted in the community of Lafayette by his greatest supporters, his wife Anne and daughters Hannah and Vivian."

"Shashi is from Lafayette and has been a chef for 15 years. His culinary traning in Ludhiana, India inspires all of his food creations. Shashi's favorite dishes are vegetarian cuisine that he enjoys cooking in the restaurant and for family and grandchildren.
